As Beirut is known to be a francophone city by excellence and thus strongly rooted with French culture, Sweet tea is managed by French Michelin star chef Yannick Alleno. This somehow consolidates this organic relationship between both countries culinary cultures and reinforces Beirut's role as the westernized facet of the Arab world and a city which has always influenced its neighbors with state of the art interventions.
The challenges for this installation were the fact that it had two different systems synchronized at the same time. One wtih an open cycle, and another a closed cycle where the water has to be recollected recycled and pumped back into the system. Another important challenge was to have a double green wall with a door that opens, to allow access to the technical room at the back.
